Balsamic Bruschetta
*Prep & ready in 30 minutes!*
Ingredients:
8 Tomatoes, diced
1/3 cup fresh Basil, chopped
¼ cup Parmesan Cheese, shredded
2 cloves Garlic, minced
1 Tablespoon Balsamic Vinegar
1 Teaspoon Olive Oil
¼ Teaspoon Salt
¼ Teaspoon Pepper
1 loaf toasted French Bread
Directions: In a bowl, toss together the tomatoes, basil, Parmesan cheese, and garlic. Mix in the Balsamic Vinegar, olive oil, salt, and pepper. Serve on toasted bread slices.

Holly’s Creamy Tomato Soup
*This recipe makes enough for 4 servings.*
Ingredients:
6 Tablespoons - Butter
2 Small onions, chopped
2 Cloves of garlic, minced
3 pounds – Ripe summer tomatoes, chopped, (= 4 cups chopped) 1 Teaspoon - Salt
1 Teaspoon – Pepper
1 Cup – Fresh Basil
½ Cup – Heavy Cream
Directions:
1.) Melt butter in a medium saucepan over medium heat. Add onions and garlic; cook for 3 minutes. Add tomatoes, salt, and pepper; cook for 5 more minutes. Stir in basil and remove from heat.
2.)Cool slightly. Transfer tomato mix to blender (fill only halfway) and blend until smooth. 3.)Return tomato mix to saucepan and add heavy cream. Adjust to your consistency. *Note: If you prefer a chunkier soup then double your vegetables and cook them together. Divide them in half and add the remaining amount at the end.
